Gluten Free

Well remember how Monday's are one of my favorite days. I go and meet with Kim, my health coach, and she has taken me off gluten. (now my doctor in NJ had this as his next step thinking I might have Celiac Disease) Let me tell you I really was nervous about this it means no bread so no bagels, no certain cereals, no noodles, no brownies, no cookies, no pancakes, no waffles, no crackers, no no no and more no's oh and no PIZZA. Basically anything with wheat! When you look up gluten you get A substance present in cereal grains, esp. wheat, that is responsible for the elastic texture of dough.

Most of you know that I tend to get sick at night and well its just been part of my life and don't really care enough to stop eating stuff that makes me sick. Well Kim convinced me, but it didn't take much I figured I just made a huge change by moving why not try this. PJ has been very helpful too she always makes sure that I always still have something to eat. Which by the way I can eat as many potatoes as I want to :).

So now it was time to go to the store and find some food that I can eat. Which meant trying new things. Hannah introduced me to these amazing granola bar thingys that I LOVE!




I found gluten free waffles. A couple of gluten free cereals that I can eat.
I just recently discovered the Chex One.
Which means I can make my own Chex mix.
I made puppy chow last Friday and it was yummy!!!


I even found some amazing chocolate chips cookies.
I was not a big fan of the gluten free pizza though. The rice noodles are not to bad either as long as they are mixed with something. I even found brownies that I am allowed to eat.

See not so bad what are you all worried about ;)

I also found a pizza crust, bread, and pancake mix that I am gonna try to make.

So needless to say today is my last trial day and we meet tonight to talk over how I feel. I do have to say I have not gotten sick once since I have been on this no gluten thing. I am even a little nervous to even go back to eating anything with gluten. It is hard but I have not gone hungry and there is always something for me to eat!
